WOW: Root:1 Cabernet Sauvignon

According to Root:1: Ripe, dark fruit flavors, of cherry, raspberry, and blackberry are complimented by rich aromas of coffee and dark chocolate. A full-bodied wine with a rich structure, soft tannins, and a long and concentrated finish. Recommended food pairings are grilled meats such as flank steak, sirloin, and ostrich.
What I think: As a tip from Doug, the owner of Redmond’s Malt and Vine, we served this over dinner with some friends last weekend and were really impressed. We served it with cedar plank grilled salmon and a bunch of grilled vegetables - probably not the most ideal combination, but it certainly worked. What i liked most about this wine, other than its intriguing label, was that it wasn’t overwhelming or too heavy like many cabs are these days. An interesting tidbit from the goodwiki tells me that “Cabernet Sauvignon, like all noble wine grape varieties, is of the species Vitis vinifera, and genetic studies in 1997 indicated it is the result of a cross between Cabernet Franc and Sauvignon Blanc.”
